    Irish Cream Shortbread

    Buttery shortbread biscuits topped with Irish liqueur cream and Cartwright & Butler Black Cherry Preserve. For the little’uns, simply whip up some cream with a sprinkling of icing sugar and a dash of vanilla before topping their towers with a grating of chocolate! Now everyone’s happy!

    Serves 4

    You will need

    • 300ml double cream
    • 2 – 3 tbsp Irish cream liqueur
    • 2 packets of Cartwright & Butler Shortbread Biscuits
    • Cartwright & Butler Black Cherry Preserve

    Method

    1)

    Pour the cream into a large jug along with the liqueur.

     

     

    2)

    Using a hand whisk, whip the cream just until it holds, then spoon into a piping bag.

    3)

    Pipe the cream around the edge of one of the biscuits before spooning some cherry preserve in the centre.

    4)

    Top with another biscuit and repeat the process until all biscuits have been used.
